Anael Santos, PhD, MV, MS

Dr. Anael Santos is the Chair of the Health and Biomedical Science Department, Professor of Chemistry, Biochemistry and Genetics, and Coordinator of the Environmental Health and Safety Office at AdventHealth University (AHU), in Orlando, Florida since 2007. He has a Veterinary Medicine degree from Federal University of Uberlandia, Brazil; and M.S. and Ph.D. in Nutrition and Biotechnology from North Carolina State University, NC. Additionally, Dr. Santos served as a Post-Doctoral, Research Associate in North Carolina State University, and worked with several research projects in the field of Nutrition, Biochemistry, Microbiology and Biotechnology. He worked at the College of Veterinary Medicine and Animal Science (Faculdade de Medicina Veterinária e Zootecnia) of the Federal University of Uberlândia (Universidade Federal de Uberlândia), Brazil, as a Professor of Nutrition and Metabolism. He has received 4 internationally recognized awards for excellence in Research in the field of Nutrition. He is a member of 3 scientific societies and a member of the Editorial Board for peer-review journals, including journals of Nutrition, Biotechnology and Agricultural Sciences. He has published many articles in peer-review journals and international conferences. His research interest is in the effect of nutrition on intestinal health.
